The Waiting Room village bakery
We will open our new Bakery and ‘Grocery Department’ for the first time this Saturday, after baking and distributing some successful test loaves in our new oven last week (pictured here on our orange shaping table).
We have recruited a brilliant craft baker called Josh who last had a bakery in the Highlands. He’s been designing new Sourdough loaves for our locale, using principally Organic Flour from the North York Moors, milled by Yorkshire Organic Millers just south of Kirkbymoorside. Josh has named our standard 800gm sourdough loaf Moorish, we will also be making regular wholemeal and rye loaves by the same methods - with varying percentages of flour types and the inclusion of some flour that is freshly milled on the premises. Josh has made a lovely Oat and Honey loaf using Ken’s Eaglescliffe Honey, and we’ll have regular sourdough ciabatta, focaccia, brioche and specials with varying inclusions, such as our Anna’s Date Malted Granary Bread, Butternut Squash Cob, and the Turmeric and Raisin Morning Loaf pictured below.
Josh is also making fresh Croissants and Danish Pastries by hand, including Pain au Chocolat, Pain au Raisin and more - and then Bombolini…
We are striving for organic ingredients so far as possible and so our butter is organic from the Edinburgh Butter Company - until our local favourite organic dairy Acorn produces a high fat baking butter (all of our butter, cream and milk for the restaurant and shop is from Acorn organic dairy in Darlington) and we are sourcing organic eggs (although our old friends at Piercebridge organic farm can’t produce enough for us at the moment).
Subscribe for a weekly Moorish Loaf
We’re setting up some weekly subscription options for people who want to place a regular order can collect from the shop at a regular time each week. We think that this will be valuable to customers so that they can be sure to get their loaf, and it will help us a lot as our production quantities will be quite limited at first especially.
We’re also serving fresh organic coffee.
We’ll add a few more buttons in the coming weeks, but our first 100 subscribers may choose to buy a weekly loaf or two, or this fresh all organic basket of Bread, Butter, Milk and Eggs for example.
